“Butcher’s Snack?”
I’ve explained this before.
A ‘butcher’s snack’, is a piece of meat cut from the end of a primal beef cut, in order to square the ends.
The weight and size vary, and can’t be sold. So the butcher will cook it up for lunch.
Picture; the smaller of the two butcher’s snacks. I’m griddling it to eat with my pork chops I’ve Sous vide.
